Ingredients
° 100g cucumber, thinly sliced
° 20g carrot, thinly shredded
° 1 tomato, sliced
° 4 chinese lettuce leaves, tore into small pieces
Dressing
° ½ fresh red chilli, seeded and finely chopped
° 1 fresh red chilli padi (optional), seeded and finely chopped
° 2 slices ginger, finely chopped
° 2 tablespoons olive oil
° 2 tablespoons apple cider vinegar or rice vinegar
° dash of sesame oil
° 1 teaspoon (1 lime) freshly squeezed kalamansi lime juice
° 1 teaspoon sugar, or to taste
° salt, to taste
Method
1. Mix the dressing ingredients in a bowl and set aside.
2. Put all the vegetables in a salad bowl, drizzled with the dressing and toss well. Serve immediately.
