Default Baked Sweet Potato Fries

There are two large sweet potatoes on my counter that I'd like to do something with, so I thought I'd cut them up and bake them into fries. My question is, is it all right to leave the skin on when I bake them in order to save the vitamins? Most recipes I looked at called for them to be skinned. Also, what is the best way to cut into it to begin with? Thank you so much!
