Made some for dindin tonight.
-dice one filet of salmon ( skin removed )
-2 tablespoon of soy sauce
-half a chopped up red onion
-finely chopped cilantro
-dill weed
-shaved ginger ( freeze some ginger root, much easier to grind )
-2 tablespoons of olive oil
toss all in a food processor, use the pluse button, don't make it a paste, just enough to blend and mix.
Form patties - I put them on a bbq in a pan with enough oil to cover the bottom of the pan. I also used a pouch of wood chips for that extra hickory smoke flavor. Once the smoke is going, put the pan on and put your patties in the pan. 5 min on each side should be plenty.
I made a mango salsa with it. Chopped up fresh - cilantro, mangoes, pineapple, green & red pepper, cucumber, toss in some lime juice and pepper!
