Creamy Chilled Cheesecake

1 cup graham cracker crumbs
3/4 cup granulated sugar, divided use
1/4 cup butter or margarine, melted
1 package unflavored gelatin
1/4 cup cold water
1 (8-ounce) package cream cheese, softened
1 cup heavy cream, whipped
1/4 cup strawberries, sliced

1. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter; press onto the bottom of a 9-inch springform pan.
2. Soften unflavored gelatin in cold water, and stir over low heat until dissolved. Combine softened cream cheese and 1/2 cup sugar; mixing at medium speed with an electric mixer until well blended. Add to the gelatin mixture. Chill until slightly thickened.
3. Whip cream until soft peaks form. Fold into chilled cream cheese mixture. Pour over the crust and chill until firm. Top with sliced strawberries.

Makes 12 servings.
