Unless you're prepping for a comp of course! But it does fit quite nicely within my "just need to drop a few pounds" diet if I'm wanting a treat.
Brownie Pie
Makes 8 servings
Ingredients
3 egg whites
2 Tbsp firmly packed light brown sugar
Eighteen 2.5" chocolate graham cracker squares, made into crumbs
1/4 C walnuts, finely chopped
1/2 tsp vanilla extract
1 pint vanilla NF frozen yogurt, slightly softened
Fresh, sliced strawberries (optional)
Hershey's syrup (optional)
Instructions
1. Preheat oven to 325. Spray a 9" pie plate with nonstick cooking spray.
2. In a large bowl, with an electric mixer at medium-high speed, beat the egg whites until soft peaks form, 3-4 minutes. With the mixer at medium-high speed, gradually add the sugar and beat until stiff peaks form, 2-3 minutes.
3. Using a rubber s****er, gently fold in the cracker crumbs, nuts and vanilla until just blended. S****e the mixture into the pie plate and spread to fill. (The consistency is like a thick paste.) Bake until firm and a toothpick inserted in the center comes out clean, about 22-25 minutes. Cool completely on rack.
4. Spread the frozen yogurt over the cooled pie; freeze, covered, until the yogurt is very firm, 2-3 hours.
5. Serve with sliced strawberries on top and drizzled with Hershey's syrup.
