Ingredients
1 garlic bulb
1/2 teaspoon olive oil
4 large potatoes
1 cup Basic Chicken Stock
dash of freshly ground black pepper
Steps
1. Preheat oven to 350°F.
2. Place garlic cloves in an oven safe dish and dash with olive oil.
3. Place the uncovered dish in the oven for 15-20 minutes.
4. Remove from the oven and cool.
5. Peel potatoes and cut in halves.
6. Place potatoes in a pot and cover with cold water.
7. Bring to a boil on high and simmer until potatoes are tender, or about 20-30 minutes. Drain.
8. Bring the stock to a boil, and then simmer.
9. Squeeze the roasted garlic cloves to release each clove of garlic.
10. Mash the garlic with a fork and get rid of the skins.
11. Mash potatoes and add roasted garlic.
12. Slowly add the stock.
13. Finally, add pepper.
14. Serve warm and enjoy!
