1 c uncooked arborio rice
4 c low fat/low sodium chicken stock - warmed up
1/4 c frozen peas
1/4 c sliced mushrooms
1/2 c leftover chicken/lean steak
1 minced shallot
olive oil (2 tbsp)
Directions
In a large saucepan, cook shallots in olive oil, add meat and mushrooms. Add rice and sautee until semi-translucent. Add stock, use 2 cups first, but keep adding later until rice is cook. Stir occasionally on low heat, do not cover for about 20 min or until rice is cooked (rice should be soft, puffy and not hard in the center).
