FRIED CHICKEN OR PARM - Oil and flour is the devil here. I found a really tasty cereal that goes great on chicken. Flax Plus by Natures Path. I grind up the cereal flakes in the blender until its powdery. It has a solid protein and fiber count and is organic. Bran flakes would work fine but it might take some trial and error. Toss the skinless chicken in some egg and bread it with the healthy flakes. I throw them in a pan with canoli oil and your done. For Parm I will just do the same and add organic tomato sauce and low fat mozz. My personal favorite though is taking the skinless chicken and breaded it, then covering it with lemon and tobasco sauce. Remove veggie oils for canola or olive ( low flame) and ditch the corn flour and your gold.
