Chickenwich - serves 4
4 boneless chicken breasts, about 4 ounces each, skinned, all visible fat remove
4 slice part-skim mozzarella cheese, about 4 ounces
4 slices ham, about 4 ounces, visible fat removed
3 tbsp whole-wheat or all-purpose flour
1 tsp dry mustard
1/2 tsp paprika
2 tsp olive oil
Place chicken breasts, smooth-side up, between two sheets of plastic wrap.
Using a meat mellet or a rolling pin, pound chicken to twice its original diameter and set aside.
Fold each slice of cheese in half and place it on a slice of ham.
Fold the ham over the cheese to form a packet that is about half as big as the piece of chicken and place one packet on top of each chicken piece.
Fold the chicken in half over the mozzarella ham packet to enclose it.
Mix well flour, mustard powder and paprika. Dip chicken into mixture and tap lightly toremove excess.
In a nonstick skillet, heat oil over medium heat,when oil is hot, add chicken to pan, saute on each side for about 4 to 5 minutes, then saute each seam side for about 20 seconds to seal.
Serve immediately.
