Tomatoes are a great source for vitamin C, and for lycopene. Lycopene is a phytochemical that may help prevent cancers, heart disease, and macular degeneration. Use tomatoes in sauces like spaghetti sauce served on whole grain pasta. Salsa also tastes delicious on potatoes or with eggs. Serve sliced tomatoes as a side dish, or on salads. Little cherry or plum tomatoes also make a healthy low calorie snack.
