Default Glucose level?

How fast does food affect glucose levels? It seems the day after I am bad my fasting level is still in the same range but 2 or 3 days later my fasting level spikes. Is this normal?
This is all new to me. Then even when I have been real good, I have a high fasting spike. I am not taking any medication. It has been only 5 months since I discovered that I have diabetes.
